Rosalie would most likely win this one. Even though shes not quite as physically powerful as the male vampires, She is a LOT stronger than Jacob in his human form, and much faster too. In his human form, Jacob would get crushed... literally. In his wolf form, he has incredible strength and speed like vampires, though not to the same extent, in terms of strength. It usually takes two or more wolves to take down a lone vampire. In terms of skills, Rose has the upper hand as well- over sixty years of experience. But the most important factor in all of this is the fact that Rosalie just happens to be a virtually indestructible, diamond-hard immortal; while Jacob is just, well.. Jacob. Comparatively soft and fragile in either of his forms. Honestly the only situation I can see Jacob winning is if Rosalie was completely fixated on Renesmee at the time of Jacobs attack. If he could phase fast enough, and go for her neck with his teeth (the only thing that can harm vampire skin) that could be the end of it. But despite his optimism and overconfidence we saw in Breaking dawn, the glorious, incredibly powerful, indestructible Rosalie would most likely annihilate the "disgusting beast".
