I will say however the name "London" apparently appears on her mail but it's not confirmed that it's actually her last name.

Many people go oleh their last names with others...so I do believe that, although they haven't officially berkata so yet, her father's full name is Bob Wyatt...making that her last name too, at least until it becomes Hofstadter. ;)

If anda remember the episode where she found out she was married to Zack, she didn't know she was actually married. She thought that the wedding was fake and that they did it just for fun. So, her last name never would have been Johnson because she wouldn't have changed it. When anda get married, your name doesn't just change. It's a lot of paperwork and a pain in the ass.

When Leonard got his butt chewed out oleh Penny's father, Leonard called him Mr Wyatt and that he was really trying to win her back. Therefore, her maiden name is the same as her father's last name. I was just as baffled as everyone else and it was right in front of us for I believe for seven seasons.
