I think it might be January because wasn't it during Valentines and Jake was giving her those candy hearts and he mentioned Bella just missed his birthday? I was thinking his bday might've been towards the end of January. Whatever the case, we know Bella's and Edward's exact bday and I think there should be an exact date for Jacob too... :(

Hang on... when Bella visited Jake in early January, he mentioned she'd just missed his birthday (it wasn't on Valentine's that he told her this as I mentioned earlier). That means Jake's birthday would probably be some time in December or even possibly November....

I know a lot has gone around about his birthday and to clarify it is January 26th!! I know people will think I'm wrong, but i'm not. My sister used to get New Moon updates to her E-mail(straight from stephanie herself) about jacob and the movie,so to clarify, it is January 26th.
