I don't think Ariel cares much about music tbh. She never participates in Sebastian's rehearsals and she missed the big concert at the start of the movie. I think she's just not interested in it.

After Rapunzel, Cinderella is the one that likes the most music (imo).

She did miss her concert, she certainly loves the human world more than music, but she's still more musically involved than any of the others, one dance or a few songs aren't much compared to a musical career, even if she skips out for humans

Not to mention ariel spent an entire movie trying to bring music back to the ocean in her Prequel!
